I love cooking but tend to stick to recipes most of the time. However, I recently found myself with some leftover vegetables and an insane desire for soup. Since it turned out pretty well I thought I would share the recipe. It’s vegan and suitable for those fashionable people following the paleo diet.
1 onion (or two onions if you’re an onion fiend like me)
2 sweet potatoes
1 vegetable stock cube (skip if you’re going paleo)
Fry the onion in a little oil (or whatever version of fat you’re using). Add the spices, stir through with the onion. I’ve tried two different mixes. A teaspoon each of cumin and coriander, a dash of tumeric and some black pepper gives a curried flavour to the soup. Alternatively, a teaspoon of ginger and a dash of cloves, nutmeg and cinnamon give more of a warming winter flavour. Garam masala would also work well. Be sure to stir the onion well once the spices are in as it will have a tendency to stick.
While onion is frying, cut up cauliflower and peel and chop the sweet potatoes. Mix the stock cube with boiling water.
Add 750ml stock (or boiling water) to the onions. Add sweet potatoes and cauliflower. Bring to the boil and cook for 30 minutes. You may need to add more water during cooking.
For a coarse country style soup mash the vegetables, or liquidise if you prefer a smooth soup.
